Recipe: Oreo Truffles

Hardly a truffle really…but so good and so easy its hard not make these for the holidays. Now the original recipe by Kraft is awesome but I ended up with LOADS of crumbs leftover…and what’s the point of wasting them? Besides your going to want to double this recipe anyway…the original only makes about 40 balls and we all know that’s just not enough!

Yes you can use any flavor of Oreo you like but don’t use the Double Stuff ones…they just don’t come out right (perhaps too much creme in the centers? I don’t know).

(2) 18 ounce packages of Oreo cookies
(2) 8 ounce packages of cream cheese, soft
(1) 3 ounce package of cream cheese, soft
(2) 12 ounce bags of semisweet chocolate chips

This is made easiest in a food processor or with a mixer but you can certainly do either the crushing or the mixing by hand.

First crush the cookies into fine crumbs. Measure out 7 cups and set aside the remaining to “top off” the truffles. Mix the cookie crumbs with the cream cheese until well blended and no white remains within the dough.

Roll into balls and chill slightly. Melt the chips together – my prefered method being a bowl in the microwave, stirring the mixture every 30 seconds. If you don’t have a dipping fork use a dinner fork instead as they are too soft to attempt with a toothpick (I made such a mess trying this!). Dip each ball into the chocolate and shake off any excess. Sprinkle with the remaining cookie crumbs, let sit until hard and refrigerate.
