I adapted this recipe from one by my wonderful co-worker Jamie! She says super A LOT so hence the name. But its so easy. I mean like incredibly easy. Its going to be really good in the middle of winter when I’m missing summer.
1/4 cup lime juice
1/4 cup lemon juice
2 boneless, skinless chicken breasts
1/4 cup flour
2 tbsp coconut flakes, unsweetened if you can
3/4 tsp paprika
1/4 tsp salt
1/4 tsp black pepper
2 tbsp brown sugar
An orange, cut into slices
In a large zip top bag or flat bowl mix together the lemon and lime juices and the chicken. Marinate for 30 minutes (or more if you like but it gets sour fast!), turning the bag from time to time to make sure you get all sides of the chicken. Set the juices aside once you pull the chicken out so you can make the sauce.
Combine flour, coconut, paprika, salt and pepper. Coat the chicken breasts with the flour mixture. Lightly brown each chicken breast in a skillet over medium heat and remove to a greased baking pan.
Pour the marinade juices over the chicken and sprinkle with the brown sugar. Place thin orange slices on top of each breast then squeeze whatever juice is left in the remaining orange over the chicken.
Bake for 25 to 35 minutes at 350 degrees, or until the chicken is done.
To serve just spoon the sauce left in the baking pan over the chicken. Enjoy!!
