Recipe: Snickerdoodle Cake

If you love Snickerdoodle cookies you will love this very simple and easy cake. Its wonderfully soft and moist but with a nice sweet and “spicy” kick (in that cinnamon way of being “spicy”). And its perfect for potlucks, picnics and other summer get-togethers. Matter of fact its one of the dishes I’m bringing to my family reunion in a few weeks.


1 3/4 cups flour
2 1/2 teaspoons baking powder
1/2 cup sugar
pinch of salt
1/4 cup butter or shortening (your preference, either works beautifully, I prefer butter)
1 egg
3/4 cup milk

1/4 cup sugar mixed with 2 teaspoons cinnamon

Combine all of the dry ingredients and then cut in the butter (or shortening) until the mixture is crumbly, again resembling cornmeal. Add the wet ingredients and mix well. Your going to end up with a very thick batter.

Pour the batter into a greased 8×8 baking pan. I used a loaf pan for the one pictured, just adjust the cooking time to 35 to 45 minutes. An 8×8 produces more uniform pieces however and I recommend using that if you can. Sprinkle with the cinnamon and sugar mixture, and if you like you can cut through the batter a few times to give the interior of the cake some of the “spice”, but that isn’t necessary.  Make sure the top is coated thoroughly. Bake at 350 degrees for 20 to 25 minutes.
