Recipe: Funnel Cake

I adore funnel cakes. Its a carnival weakness of mine…but they are so simple to make that I need to remind myself frequently not to buy them! This is a Heloise recipe.

2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1 1/2 cups milk

Heat oil on medium high until hot. Use a saucepan or skillet and fill to a depth of 2 inches. If you have a deep fat fryer that will work better but honestly I always make mine on the stove and I have a fryer. Its a pain to dig out – which is why I almost never use it. It does cook differently though so figure out which is your preference.

Mix together the ingredients in a very large measuring cup or a bowl with a pour spout. This just makes it easier to get it into the funnel when your over that hot oil.

Once that oil has been heated throughly pour a sufficient amount of batter into a funnel, placing your finger over the opening on the bottom to prevent it from “pouring out” until your ready. Position it over the oil and stream it into the pan in a criss cross fashion. Once you have a good size funnel cake put your finger back over the hole and set aside.

Brown the funnel cake (but not too dark) and flip to remaining side (about 1 minute on each side). Immediately pull it out when done and dust with powdered sugar.

Yummy! So yummy!! And easy and quick! You can have a whole batch of these in less than 15 minutes.
